How do you edit a growing file ?

How do you edit a growing file ?
I am trying to solve how do I edit a text file
that is constantly increasing in size (This is a log
file ). If I open that file and save it after N time,
I will be loosing data during that N time.This file
grows per millesecond. I need to edit the original file
and save it with its original name.<br><br>Any
suggestion would be much appreciated !!! Thanks.
