I`ve heard great things about BBEdit ...

Re: Mac OS X editor for creating .xml files?
You say you want just a "simple editor", but if you use jEdit at all for
XML, it`s worth installing the XML plug-in. Then jEdit will move easily from
beginning tag to end tag (click on the connecting line in the gutter),
colorize the text, display a tree view of the document, and generally behave
in a more intelligent way.
There`s also an XML Indent plug-in, which can be invaluable when your XML
document is all on a single line. Be careful with it, however, because it
can easily insert white space you don`t want.

Larry Kollar responded:
Someone already recommended BBedit (barebones.com). They used to have a free
"Lite" version that I used back in the pre-X days, but I didn`t see anything
about it on their web site now. A lot of people think BBedit is worth the
$99 though.
On a tighter budget, there`s jEdit (jedit.sf.net) -- it`s written in Java,
but my 350MHz G3 can handle it; if you have a newer iMac, it won`t be a
problem. The price is right (Free) and it has an XML plugin that makes
working with XML a little more pleasant.
